Carrots and Mixed Greens Salad With Sesame Dressing

A healthy and vibrant salad with crunchy veggies, walnuts, and sesame dressing.

Ingredients

For Salad

  • 2 medium-size carrots, peeled and thinly sliced
  • 2 cups spinach, chopped
  • 1 medium cucumber, peeled, deseeded, and finely chopped
  • 1 spring onion, finely chopped
  • 1 cup cabbage, thinly sliced
  • 1 small tomato, deseeded and finely chopped
  • 1 medium capsicum, deseeded and thinly sliced
  • Ā½ tsp salt
  • Ā¼ tsp ground black pepper
  • 2 Tbsp roasted sunflower seeds
  • Ā½ cup roasted walnuts, roughly chopped

For dressing

  • 2 Tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 2 tsp honey
  • Juice from one lemon
  • Ā½ tsp garlic powder
  • Ā½ tsp onion powder
  • Ā¼ tsp toasted sesame seeds

Instructions

    1. Add all the ingredients for the salad to a large mixing bowl.
    2. To prepare the dressing, add all the dressing ingredients in a jar, close the lid, and shake well until everything is combined. Transfer the sauce to a bowl and sprinkle a few toasted sesame seeds on top.
    3. Transfer the salad to a serving bowl, drizzle on the dressing, and toss to combine. Sprinkle a few more walnuts and sunflower seeds. Serve fresh, and enjoy!

Notes

  • Once the sauce/dressing has been added to the salad, enjoy it immediately. Else, store the salad and sauce separately in airtight containers in the fridge for up to one day.
