Ingredients
½ tsp butter
2 apples, diced
½ Tbsp ground cinnamon
2 tomatoes, chopped and deseeded
1 medium cucumber, chopped and deseeded
½ Tbsp roasted pumpkin seeds
¼ cup roasted almonds, chopped
1 Tbsp pomegranate seeds
¼ tsp salt
½ Tbsp honey
½ tsp lemon juice
Directions
- Heat a pan on low heat and add butter, apples, and cinnamon. Roast for about 5 minutes, or until apples are coated with cinnamon and become soft.
- In a large bowl, combine the roasted apples, tomatoes, cucumber, pumpkin seeds, almonds, pomegranate seeds, and salt. Pour over honey and lemon juice; toss to coat. Finally, serve fresh and enjoy!
