Make this warm, healthy, and hearty cinnamon roasted sweet apple salad in no time!

Ingredients

  • ½ tsp butter

  • 2 apples, diced

  • ½ Tbsp ground cinnamon

  • 2 tomatoes, chopped and deseeded

  • 1 medium cucumber, chopped and deseeded

  • ½ Tbsp roasted pumpkin seeds

  • ¼ cup roasted almonds, chopped

  • 1 Tbsp pomegranate seeds

  • ¼ tsp salt

  • ½ Tbsp honey

  • ½ tsp lemon juice

Directions

  • Heat a pan on low heat and add butter, apples, and cinnamon. Roast for about 5 minutes, or until apples are coated with cinnamon and become soft.
  • In a large bowl, combine the roasted apples, tomatoes, cucumber, pumpkin seeds, almonds, pomegranate seeds, and salt. Pour over honey and lemon juice; toss to coat.  Finally, serve fresh and enjoy!
