Watermelon Salad

Yield: 2 servings

A simple salad made with a few ingredients and comes together in minutes!


For the Salad

  • 2 cups watermelon, seeds removed and cubed
  • 1 cup cucumber, peeled, seeds removed and cubed
  • 1 small onion, very thinly sliced
  • ½ cup fresh mint leaves, chopped
  • 2 tsp roasted sunflower seeds
  • 2 tsp roasted pumpkin seeds
  • 1 tsp roasted sesame seeds

For the Dressing

  • 3 Tbsp honey
  • 1 Tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp ground black pepper


    1. Mix watermelon, cucumber, onions, mint, roasted sunflower, and pumpkin seeds in a large mixing bowl.
    2. In a small bowl, whisk together honey, fresh lemon juice, salt, and ground black pepper.
    3. Drizzle the dressing over the watermelon and cucumber mixture and toss to coat. Finally, sprinkle with toasted sesame seeds and serve fresh.
