Watermelon Salad
A simple salad made with a few ingredients and comes together in minutes!
Ingredients
For the Salad
- 2 cups watermelon, seeds removed and cubed
- 1 cup cucumber, peeled, seeds removed and cubed
- 1 small onion, very thinly sliced
- ½ cup fresh mint leaves, chopped
- 2 tsp roasted sunflower seeds
- 2 tsp roasted pumpkin seeds
- 1 tsp roasted sesame seeds
For the Dressing
- 3 Tbsp honey
- 1 Tbsp fresh lemon juice
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions
- Mix watermelon, cucumber, onions, mint, roasted sunflower, and pumpkin seeds in a large mixing bowl.
- In a small bowl, whisk together honey, fresh lemon juice, salt, and ground black pepper.
- Drizzle the dressing over the watermelon and cucumber mixture and toss to coat. Finally, sprinkle with toasted sesame seeds and serve fresh.
