One-Pot Lentil Rice

Yield: 6 servings

Make this healthy, incredibly delicious, and easy one-pan lentil rice recipe for lunch or dinner!

Ingredients

  • 1 ½ cups brown lentil (masoor dal)
  • 2 cups basmati rice
  • 2 Tbsp oil
  • 3-4 garlic cloves, finely chopped
  • 2 cm chunk ginger, finely chopped
  • 2 medium-size onions, finely chopped
  • 2 medium-size tomatoes, puréed
  • ½ tsp ground black pepper
  • 1 tsp ground red chilli
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp salt
  • 4 cups water

Garnishings

  • 1 Tbsp lemon juice
  • 1 Tbsp ghee
  • ½ cup coriander, chopped

Instructions

    1. Soak brown lentils for 7-8 hours or overnight. Then, strain out the lentils and set them aside.
    2. Soak basmati rice for 20 - 30 minutes.
    3. Heat a large pan (or kadhai) on medium heat. Add oil, garlic, and ginger. Saute for 4-5 minutes.
    4. Add onions and saute for 4-5 minutes.Add tomato puree and cook for 3-4 minutes. Then, add ground black pepper, ground red chilli, ground cumin, ground coriander, and salt. Cook for about 5 minutes.
    5. Now add the soaked lentils and rice. Mix everything well and add water.
    6. Close the lid and cook for about 15-20 minutes on low heat.
      Turn the heat off and let the rice continue to steam covered for a further 10 minutes.
    7. Finally, add ghee, lemon juice, and chopped coriander. Gently mix everything.
    8. Serve the rice and lentil mixture hot, with mint coriander chutney and raita on the side.
