Green Juice

Yield: 1 serving
Prep Time: 10 minutes
Soaking Time: 20 minutes
Total Time: 30 minutes

Blend together greens and fruits to make this vibrant glass of juice packed with antioxidants, vitamins, and minerals.


  • 1 Tbsp chia seeds
  • ¼ cup water for soaking chia seeds + 1 cup water for the juice
  • 2 cups spinach
  • 1 medium cucumber, peeled
  • 1 cm ginger chunk
  • 1 Tbsp lemon juice
  • 10-12 curry leaves
  • 1 medium orange, peeled
  • 1 medium apple, cored
  • ¼ tsp salt
  • ⅛ tsp ground black pepper


    1. Soak the chia seeds in water for about 20 minutes or until they have a jelly-like texture.
    2. Place the remaining ingredients in a juicer and strain the juice.
    3. Pour the juice into a glass and add a spoonful of soaked chia seeds, stir, and serve fresh.
