Quick and Easy Cucumber Salad

Yield: 2 servings

Delicious and crunchy salad made with hydrating cucumbers and comes together in 10 minutes.

Ingredients

  • 2 medium-size cucumbers, peeled
  • 1 small onion, finely chopped
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp ground cumin

Dressing

Garnishing

  • 2 Tbsp toasted peanuts, crushed
  • 1 Tbsp toasted sesame seeds
  • ¼ cup fresh mint leaves, chopped

Instructions

    1. Cut the peeled cucumbers length-wise, scrape out the seeds using a spoon, and then chop them into small pieces.
    2. Add the chopped cucumbers, onions, salt, ground black pepper, and ground cumin to a large mixing bowl.
    3. To prepare the dressing, mix the dressing ingredients together in a small bowl.
    4. Pour the dressing over the cucumber salad. Finally, garnish with crushed peanuts, sesame seeds, and fresh mint leaves. Enjoy!
